Italian Caprese Sandwich

INSTRUCTIONS
Step 1
Cut the ciabatta loaf in half horizontally. If you prefer warm bread, lightly toast the ciabatta halves on a grill or in a toaster oven for 2–3 minutes, until golden brown and slightly crispy on the outside.
Step 2
Spread 1 tablespoon of pesto evenly on the cut side of each half of the ciabatta bread.
Step 3
- Place the sliced fresh mozzarella on the bottom half of the bread.
- Add a layer of fresh tomato slices on top of the mozzarella.
- Season the tomatoes with a pinch of salt and a grind of black pepper.
- Add a handful of fresh basil leaves and arugula on top of the tomatoes for a burst of freshness.
Step 4
Drizzle 1 tablespoon of balsamic glaze over the layers of ingredients. You can add more if you enjoy a richer flavor.
Step 5
Place the top half of the ciabatta loaf on the sandwich. If desired, drizzle a little extra virgin olive oil over the sandwich for extra richness.
Step 6
Slice the sandwich in half and serve immediately. This sandwich pairs beautifully with a side salad or soup.
Optional Variations:
- Add prosciutto for a meatier option.
- Use sun-dried tomatoes instead of fresh tomatoes for a more intense flavor.
- Grill the sandwich in a panini press for a warm, melted version.
