Scandinavian Smoked Salmon Sandwich

INSTRUCTIONS
Step 1
In a small bowl, mix the softened cream cheese with the chopped dill and a splash of lemon juice. Season with a little salt and pepper to taste. Stir until smooth and well combined.
Step 2
Spread a generous layer of the dill cream cheese mixture on two slices of rye bread.
Lay a few slices of smoked salmon over the cream cheese.
Sprinkle a few capers over the salmon and add a handful of fresh arugula for a peppery kick.
If desired, add thinly sliced red onion for extra flavor and crunch.
Step 3
Place the remaining slices of rye bread on top of each sandwich.
Lightly press the sandwiches together and cut in half diagonally for easy serving.
Step 4
Garnish with a few extra sprigs of dill and serve immediately. These sandwiches pair wonderfully with a side salad or light soup.
