Spanish Jamón & Manchego Sandwich

INSTRUCTIONS

Step 1

Lightly toast the slices of rustic bread in a toaster or on a grill for about 2–3 minutes, until the edges are golden and the inside remains soft.

Step 2

Spread about 1 tablespoon of aioli evenly on one side of each slice of bread.

Step 3
On two slices of the bread (the bottoms), arrange the thinly sliced Jamón Ibérico. Add thin slices of Manchego cheese on top of the ham. Layer the roasted red pepper strips over the cheese.
Step 4
Drizzle a small amount of extra virgin olive oil over the ingredients for added richness. Season with a pinch of salt and freshly ground black pepper, if desired.
Step 5

Place the remaining two slices of bread on top of each sandwich, aioli side down.

Step 6

Serve and enjoy.
