Spicy black bean veggie burger

INSTRUCTIONS

Step 1

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, but some larger pieces remain for texture. Add the breadcrumbs, chopped red bell pepper, onion, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper. Mix well to combine.

Step 2

In a separate small bowl, whisk the egg. Add the whisked egg to the black bean mixture and mix until well combined. Form the mixture into 4 equal-sized patties.

Step 3

Heat the olive oil in a large skillet over medium heat.

Add the black bean patties to the skillet and cook for about 5-7 minutes on each side, until they are crisp and golden brown on the outside and heated through.

Step 4

Lightly toast the burger buns in the skillet or a toaster.

Place a lettuce leaf on the bottom half of each bun, followed by a black bean patty.

Add slices of avocado and tomato on top of the patty.

Spread a generous amount of spicy mayo on the top half of the bun.

Place the top bun over the assembled ingredients and lightly press the burger together.

Step 5
