Sweet Potato & Goat Cheese Pizza

INSTRUCTIONS
Step 1
Preheat your oven to 220°C (425°F).
In a small bowl, mix the olive oil and minced garlic.
Roll out each pizza dough ball to your desired thickness and place them on baking sheets.
Brush the garlic olive oil mixture evenly over each rolled-out dough.
Step 2
Place the thinly sliced sweet potatoes on a baking sheet. Drizzle with a little olive oil and season with salt and pepper.
Roast in the preheated oven for about 15 minutes, until slightly tender. Set aside.
Step 3
In a large skillet, heat a tablespoon of olive oil over medium heat.
Add the thinly sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions turn golden brown and caramelized, about 15-20 minutes. Set aside.
Step 4
Distribute the roasted sweet potato slices evenly over each garlic-oiled pizza base.
Scatter the crumbled goat cheese over the sweet potatoes.
Add the caramelized onions evenly across the pizzas.
Step 5
Bake the pizzas in the preheated oven for about 20-25 minutes, or until the crust is golden and the cheese is slightly browned.
Step 6
Once out of the oven, top the pizzas with a handful of fresh arugula.
Drizzle with balsamic glaze for added sweetness and tang.
Cut into slices and serve immediately.
Optional Variations:
- Add prosciutto for an extra savory element.
- Sprinkle some pine nuts for added crunch and flavor.
- Use feta cheese instead of goat cheese for a different taste.
