INSTRUCTIONS
Step 1
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and herbs de Provence (if using). Season with salt and pepper to taste. Set aside.
Step 2
Bring a small pot of salted water to a boil. Add the green beans and cook for 2-3 minutes until bright green and tender-crisp. Drain and plunge them into a bowl of ice water to stop the cooking process. Once cool, drain and pat them dry with a paper towel.
Step 3
Spread a thin layer of the vinaigrette on both halves of the baguette.
On the bottom half of the baguette, layer the mixed greens (if using), flaked tuna, and boiled egg slices.
Add the blanched green beans, red onion slices, olives, and capers over the tuna and eggs.
Drizzle more vinaigrette over the ingredients for extra flavor.
Step 4
Place the top half of the baguette on the sandwich and press down gently to help the ingredients meld together.
Step 5
Slice the sandwich in half and serve immediately. This sandwich is perfect on its own or with a light side of salad.

Optional Variations:
- Add anchovies for a more authentic Niçoise flavor.
- Grill the sandwich lightly to warm it up, which will slightly melt the vinaigrette into the bread.

- 2 boiled eggs, peeled and sliced
- 100g green beans, blanched (cooked for 2-3 minutes in boiling water, then plunged into cold water)
- ¼ red onion, thinly sliced
- 8-10 black olives (Niçoise or Kalamata), pitted and halved
- 1 tablespoon capers, drained
- A handful of fresh mixed greens (optional, e.g., arugula or baby spinach)
For the vinaigrette
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- ½ teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
- ½ teaspoon dried herbs de Provence (optional)
